Hot Pepper & Beef Enchiladas
Hot Pepper & Beef Enchiladas
These enchiladas have all the traditional Mexican flavors, but with less fat.

Preparation Time: 25 min.  
Baking Time: 28 min.  
Servings: 12 servings

Ingredients:
  
1 1/2    cups fat free sour cream
1/4    cup sliced green onions
12    ounces roast beef, cut into bite-sized pieces
1/2    pound slice (2 cups) Alpine LaceĀ® Deli Reduced Fat American Cheese, shredded
1 to    2 tablespoons chopped green chiles
1/2    teaspoon salt
1    (16-ounce) can fat free refried beans
12    (6-inch) corn tortillas, warmed
1    (10-ounce)  can enchilada sauce

Instructions:
    Heat oven to 350°F. Stir together sour cream, green onions, beef, 1 1/4 cups cheese, green chiles and salt in large bowl.

    Spread 2 tablespoons refried beans over each tortilla; top with about 1/4 cup beef mixture. Roll up tortillas. Place, seam-side down, in ungreased 13x9-inch baking pan. Cover with aluminum foil. Bake for 15 minutes.

    Uncover; pour enchilada sauce evenly over tortillas. Continue baking, uncovered, for 12 to 15 minutes or until heated through.

    Sprinkle with remaining cheese. Continue baking for 1 to 2 minutes or until cheese is melted.

    TIP: To warm tortillas, sprinkle each with 1 teaspoon water; wrap in plastic food wrap. Microwave on HIGH for 45 to 60 seconds before spreading with refried beans.
